Questi uid:gid sono fissi? Se si, allora forse puoi aggiungere l'utente
www-data al gruppo bind sulla macchina client?

Però il fatto che un cd da root ti dia permission denied mi fa pensare
che lato server l'uid 0 sia mappato a qualcosa altro. Forse hai attivo
il root squashing. Prova l'opzione no_root_squash nel mount.
